Synthesis of Ammonium-Based Ionic Liquids for the Extraction Process of a Natural Pigment (Betanin)

The use of new synthesized ammonium-based ionic liquids was explored as an alternative to the current process implemented in betanin extraction from red beet juice, resulting high yields: 70% and 82%. Betanin is a vegetal pigment that has been applied large variety products food industry, which important, for it can work substitute synthetic dyes used nowadays. Additionally, kosmotropic salt sodium acetate order separate complex formed by liquid interest combined two techniques: ATPS (aqueous two-phase system) SOES (salting-out system). results reveal studied techniques could novel juice employing liquids, have not tested this purpose other research.
